Healthy Green Chocolate Pudding (Dairy Free, Sugar Free)

1 avocado
1/2 tsp peppermint extract
3/4 cup unsweetened almond or coconut milk
Cacao Nibs
Mix all ingredients except nibs in a food processor or blender until smooth. Spoon into a dish and add cocoa nibs to the top.
